After Italy, the success of ice cream spread to France with Catherine de Medici who imported it to her court. In the fifteenth century, the Italians had the idea of adding cream to sorbet, therefore creating ice cream as we know it today. The Crusaders would have rediscovered these iced desserts before bringing them to Sicily. The word sorbet comes from Turkish chorbet or sharbet which itself comes from Arabic chourba (fruit drink or syrup). They used to mix fruit juice in containers that they were cooling by running a mixture of snow and saltpetre on the outside. It was the Chinese who invented sorbet more than 4,700 years ago.
